I'll be doing chille con carne in today's cooking class, another straightforward meal that is easy to learn.
I'm starting today's cooking class. To avoid yesterday's accidents, you can just watch and learn today.
We will be making a basic chill con carne. Start by chopping 2 onions and 2 garlic cloves. We are going to lightly fry this with some vegetable oil in a saucepan until they are translucent and before they turn brown.
At this point I will add 3 cans of chopped tomatoes and continue cooking on a gentle heat.
Now I'm going to add 200g of red kidney beans which I soaked overnight in water, poured the water away and rinsed the beans before adding to the saucepan. I will turn the heat down to a simmer (so it just gently bubbling) and cook for 45 minutes. Alternatively, you could just use 2-3 cans of red kidney beans.
While that's cooking away, I'm going to chop up this beef that Big Brother provided, it looks like braising steak, into nice chunky bits. Alternatively, you could just use ground beef (mince beef for the Europeans amongst us).
I'm going to put the beef to one side for a moment and cut up a chille pepper, first cutting off the head and throwing it away, then slicing it lengthways and remove the seeds and finally chopping it finely:
Ok, now fry the beef in a skillet with hot vegetable oil until it's brown and then I'm going to add one teaspoon of chilli powder and the chopped red chille.
I will fry and stir these for around 2-3 mins
I'm going to add the fried meat to the saucepan containing the tomates and beans and season with a little salt.
Chop up 2 read peppers and add to the saucepan.
I'm now going to turn the heat up until it starts boiling before lowing the heat to a simmer and leave it simmering for around 20 minutes.
And that's it, simplicity itself. Any questions?
While that's cooking I will boil some rice to serve with it.
Sorry I didn't make it today Charles. I decided to just chill as it's my birthday. Looking forward to having a drink with you later. My hand is much better now btw.
